Sardine nigiri

Preparing sushi is an art and it can be a lot of fun. The nigiri sardine to the scent of lemon is a special dish because the iwashi sardines is a highly prized ingredient in Japanese cuisine. Ingredients:

  • 8 fresh sardine fillets (with skin).
  • 2 tablespoons of sea salt.
  • 3 tablespoons of rice vinegar.
  • 1 tablespoon mirin.
  • 1 teaspoon of sugar.
  • 2 tablespoons lemon juice.
  • 1 pinch of grated lemon peel.
  • 175 g of rice for sushi.
  • 2 teaspoons wasabi.
  • 8 stalks of chives.

Steps to follow to make this recipe:

  1. First wash the sardine fillets in cold water, pat them dry, and remove any possible bones with tongs. Cover the steaks with the sea salt and let them rest for an hour. Wash and dry them again.
  2. Combine the rice vinegar with the mirin, sugar and juice, and lemon peel in a small bowl. Marinate the sardine fillets in this mixture, with the covered bowl for 2 hours in the fridge.
  3. Remove the steaks from the marinade and pat them dry. Make small cross cuts, a few millimeters deep, in the skin of the sardines with a very sharp knife.
  4. Finally, with moistened hands, form 8 oval balls the same size as sushi rice. Then spread one side of the fillets with the wasabi, place a rice ball on top and press carefully. Tie the sushi with a stalk of chives.

Tips.

  • You will find fresh sardines throughout the year. Alternatively, you can use canned sardines or a fresh peeled mackerel fillet.
