How to make baked bonito

Ingredients:

  • 1 kg of bonito sliced.
  • 4-5 potatoes.
  • 1 large onion.
  • 1 green pepper.
  • 1/2 yellow bell pepper.
  • 3 garlic cloves.
  • Hot pepper.
  • Parsley.
  • Ground black pepper.
  • Virgin olive oil.
  • White wine.
  • Water.
  • Salt.

Steps to follow to make this recipe:

  1. We are going to start with the preparation of this recipe for baked bonito. The first thing is to preheat the oven to 180 degrees while you prepare all the vegetables and fish. Take the tuna slices, clean with plenty of water and dry with a clean cloth, then take the potatoes, peel them and cut into medium-thick slices, add a little oil and salt. We recommend that you put them in the microwave for a maximum of 5 minutes on maximum power so that they become a little and soften.
  2. Now is the time to prepare the vegetables. Take the onion and cut it into julienne strips, then you must cook in a pan with a little salt and olive oil. Cut one of the garlic cloves into slices and add to the onion, then take the green and yellow pepper and cut into strips, add to the pan until everything is done well. Put half a glass of white wine, let it evaporate and add a small pinch of hot pepper.
  3. We are going to prepare a mixture with garlic and parsley with which you will paint the  slices of bonito del Norte. Take a mortar and crush the remaining 2 garlic cloves with the parsley, ground black pepper and salt. When they are well chopped, add a splash of olive oil and mix well again. When you have a good mixture, take the slices and spread the fish with this sauce.
  4. Once you have the fish spread and all the vegetables cooked, you must take a baking tray and arrange the potato slices on the base, the bonito on top and then all the vegetables. Then you can sprinkle with a little white wine and water, which will have been previously mixed with the remains of garlic, parsley and oil from the mortar.
  5. Once sprayed, put the bonito in the oven and cook for 15 to 20 minutes at 150 ºC.  When you take it out, let it rest for 5 minutes before serving and enjoying.
